The Bittings have written a number of books on canning and home preparation of food. This short volume includes a brief description of the preparation and production of ketchup, primarily from commercial production view, and then a more scientific treatment of this condiment and its ingredients.
Note: The last section in the book (sections 20 and 21 in this recording) is titled "Structure of the Tomato". In fact, it is devoted to microbiological examination of pulp and ketchup.

Story un-ironically discusses the use, construction, and entomology of ketchup. The author completely ignored the role ketchup has played in oppressing BIPOC peoples. No mention of how many BIPOCs died creating ketchup for rich white males. No discussion of the role ketchup played in upholding the outdated cis-normative world view. I am glad we have progressed since this evil discourse was written. Now, any books about ketchup, or anything else for that matter, rightfully have lots of discussions on gay sex and white fragility. The narrator was also problematic. His excellent narration and great voice will likely hypnotize the masses into ignoring the role ketchup has played in the exploitation of indigenous people by the ketchup colonizers. Story needs to be re-narrated by someone with a whiney nazaly voice so we won't be misled into accepting the evils of ketchup.
